Avocado Pesto
This quick and easy recipe can be used in various ways (see following recipes), saving you time during a busy work week. Avocados are great for our eyes, brain, heart, joints, and skin. They’re rich in vitamins and fiber, which helps our digestion and keep us full longer.
Ingredients
2 avocados
1 lemon, juiced
1/2 c raw cashews
2 garlic cloves
2 bunches of fresh basil
1/2 c nutritional yeast
1/2 t pink salt
fresh cracked black pepper
splash of water
Directions
Add everything to a food processor and blend til smooth. Use with pasta, roasted vegetables, etc.
