HEALTHY BREAKFAST SANDWICH

Start your day with a nutritional breakfast sandwich. This includes eggs and sautéed spinach with avocado spread, nutritional yeast, everything bagel seasoning, and pink salt on your favorite hearty grains and seeds toast.

Ingredients

  • 1 c fresh organic spinach leaves

  • 2 organic, pasteurized eggs

  • 1/2 T everything bagel seasoning (without salt)

  • 1/2 T nutritional yeast

  • 1/2 t EVOO

  • 1/8 t freshly cracked black pepper

  • pinch or so of Himalayan pink salt

Avocado Spread

  • 1 organic avocado

  • 1/2 T freshly squeezed lemon juice

  • 1/4 t freshly cracked black pepper

  • 1/4 t Himalayan pink salt


DIRECTIONS

Add all of the avocado spread ingredients to a food processor and blend. Store any unused portion in the fridge for up to a week.

Drizzle EVOO into a sauté pan. Add the spinach, everything bagel seasoning, and nutritional yeast; sauté for a minute or so. Add the eggs, salt, and pepper. Cook until the eggs are done to your liking.

While that cooks, toast your bread. Smear the avocado spread on the toast. Add the sauteed spinach and eggs on top. Enjoy!
