BLUEBERRY BANANA BREAD PROTEIN MUFFINS

Ingredients

  • 1/3 c raw honey

  • 1/2 c cold-pressed unrefined coconut oil

  • 3 ripe organic bananas, mashed

  • 1 t vanilla

  • 8 oz organic firm tofu, drained

  • 2 t aluminum-free baking powder

  • 1 t cinnamon

  • 1/2 - 3/4 c coconut sugar (depending on your sweet tooth)

  • 1 c organic whole wheat flour

  • 1-1/2 c bran cereal or your favorite granola

  • 1 c organic blueberries

  • 1/2 c chopped pecans

  • pinch of Himalayan pink salt


Directions

Preheat oven to 375 and coat muffin pan(s) with coconut oil spray.

In a medium mixing bowl, combine the honey and oil. Stir in bananas, tofu, and vanilla. Add all of the remaining ingredients (except berries) and mix well. Gently stir in the blueberries.

Using an ice cream scoop, add the mixture to the muffin tins. Makes about 12-18 dense muffins. Bake for 20 minutes or until a toothpick inserted comes out clean. Let cool.
