CHOPPED SALAD PITA

This is by far the quickest meal I have ever made. Some may throw all of these ingredients on a large cutting board, but I throw mine in the food processor and pulse a few times and it’s done. It may not look pretty, but it’s pretty delicious!

Vegan, Dairy Free


Ingredients

  • Pita bread

  • Half seedless cucumber, chopped

  • Handful of fresh spinach and/or spring mix

  • 1 avocado, diced

  • 2 T or so fresh dill

  • 1 T vegan parmesan

  • 1/2 c chickpeas, rinsed

  • 1 can artichoke hearts, drained

  • 1/4 c raw sunflower seeds

  • 1 t capers

  • 1/4 c kimchi

  • 1 T fresh lemon juice

  • 1 t each: pink salt, pepper, onion powder, garlic powder, basil, oregano

  • pinch of cayenne

  • drizzle of EVOO


Directions

Add all ingredients to a food processor. Pulse about 3 times and taste. Adjust spices if needed. Stuff it into pita pockets and enjoy!
