CHOPPED SALAD PITA
This is by far the quickest meal I have ever made. Some may throw all of these ingredients on a large cutting board, but I throw mine in the food processor and pulse a few times and it’s done. It may not look pretty, but it’s pretty delicious!
Vegan, Dairy Free
Ingredients
Pita bread
Half seedless cucumber, chopped
Handful of fresh spinach and/or spring mix
1 avocado, diced
2 T or so fresh dill
1 T vegan parmesan
1/2 c chickpeas, rinsed
1 can artichoke hearts, drained
1/4 c raw sunflower seeds
1 t capers
1/4 c kimchi
1 T fresh lemon juice
1 t each: pink salt, pepper, onion powder, garlic powder, basil, oregano
pinch of cayenne
drizzle of EVOO
Directions
Add all ingredients to a food processor. Pulse about 3 times and taste. Adjust spices if needed. Stuff it into pita pockets and enjoy!
