DARK CHOCOLATE BANANA PIE

This easy no-bake pie is rich and creamy without the dairy and processed sugar.

Vegan, Dairy Free, WFPB, Gluten-Free


Ingredients

Crust:

  • 3/4 c raw pepitas

  • 1/2 c rolled oats (gluten-free if needed)

  • 15 medjool dates

    Banana Layer:

  • 3 bananas

  • 1/3 c nut butter of choice

  • 3 T pure maple syrup

  • 1 t vanilla extract

  • 3 t psyllium husk powder

    Chocolate Layer:

  • 1/2 c raw cacao

  • 1/4 c water

  • 6 T pure maple syrup

  • 1/2 c nut butter

  • 1/8 t Himalayan pink salt


Directions

Line a springform pan with parchment. Add the seeds and oats to a food processor and pulse a few times. Next, add the dates and blend until the mixture is sticky when pressed together between your fingers.

Transfer to the pan and press into an even layer. Set aside.

Add the banana layer ingredients into the processor and blend until smooth and creamy. Pour the filling over the crust and place in the freezer for 30 minutes.

In a medium bowl, add the chocolate layer ingredients and stir until blended well. Pour this over the banana layer and smooth out with a spatula. Keep refrigerated.
