TOFU BACON BLT

Once you let the tofu marinate overnight, this delicious sandwich is ready in 10-12 minutes! Add spinach (or your favorite lettuce), tomato, and avocado to your favorite hearty grains and seeds toast and you’ve got yourself a nutritious meal.

Ingredients

  • 1 lb organic extra firm tofu, sliced 1/8” thick

  • 1-2 T vegan mayo

  • 8 slices of your favorite whole grain bread, toasted

  • 1 tomato, sliced

  • 1 avocado, sliced

  • 1 c fresh organic spinach leaves

  • pinch or so of Himalayan pink salt

  • freshly cracked black pepper

  • coconut oil cooking spray

Marinade

  • 1/3 c coconut aminos

  • 3 T pure maple syrup

  • 1 T balsamic vinegar

  • 1/2 t garlic powder

  • 1/2 t onion powder

  • 1/2 t paprika

  • 1/4 t ground cumin


DIRECTIONS

Make the marinade in a large sealable bag, along with the sliced tofu. Refrigerate overnight.

Using an air fryer, coat with cooking spray and air-fry the tofu at 360 for 10-12 minutes, flipping halfway.

While that cooks, toast your bread. Smear the mayo on the toast. Add the spinach, tomato, salt, pepper, cooked tofu, and avocado on top. Enjoy!
